In the dietetic field, it is essential to utilize science-based evidence in conjunction with creativity to develop solutions that effectively meet the needs of our patients. Please stay and view some of my favorite projects I've had the opportunity to work on during my undergraduate career.
Award Winning Spicey Harvest Mini Muffins
These spicy harvest mini muffins were awarded second place in the 2022 FSHN Food Challenge. This challenge asked participants to create a recipe using a specific type of flour that has a low sugar, fat, or caloric value. The recipe I created used soft red winter wheat and 0g of added sugar. I used chopped apples and applesauce to add sweetness, and cayenne pepper to add a hint of spice. Please feel free to check out the recipe!


Silk Almond Milk

Milk alternatives such as Silk almond milk have become increasingly popular over the past decade. In this project, we broke down the composition of almond milk, reviewed the economic factors of the brand Silk, andoperties to cow' compared the prs milk. We also conducted our own consumer testing, which reveald that 56% of our 25 participants preferred the taste of almond milk over cow's milk.

Food for Thought

As a college student, being able to fully utilize every aspect of your brain power is a powerful tool. We researched and presented ways to keep your brain fueled to improve concentration, mood, and memory. We presented foods and diets that college students could consume to help them get prepared for their upcoming final exams.
Food Demo - High Protein Apple Dip

Creating videos and being in front of a camera has become such an important part of many dietitians' jobs. This project prompted us to create a cooking demonstration video. We decided to create a high-protein apple dip that was quick and easy for college students who are always on the move. We used Greek yogurt as well as peanut butter to achieve a higher protein content to keep you satisfied during your busy schedule.

Taurine: More than Energy

Taurine is a popular additive among many energy drinks, such as Monster. In this project, we had to determine whether we, as dietitians, would recommend a taurine supplement for our client. By reviewing how taurine affects various body systems, as well as supporting studies (such as the effects of taurine on osteoporosis), we determined that a taurine supplement could benefit individuals who do not naturally obtain a sufficient amount of taurine through their diet. However, we would not recommend using an energy drink to attain the extra taurine.
